Bircher Muesli

Bircher Muesli If the thought of fitting into your swimming costume come summertime bothers you, don't worry! There are plenty of scrumptious, healthy alternatives to get the warming comfort you crave, while still providing a healthy meal.

Ingredients:
2 cups rolled oats
1 cup orange or apple juice
1 cup yoghurt
1 cup sultanas or currants
2 tablespoons honey (optional)
100g mixed fresh fruit (sliced bananas, finely diced apple (skin on), blueberries, chopped strawberries)
1/4 cup slivered almonds
Generous pinch ground cinnamon or nutmeg (optional)

Method:
Combine rolled oats, fruit juice, yoghurt, sultanas and honey. Stand for 2 hours or overnight. Add the fruit and mix well. Stir in nuts and cinnamon and serve.

Tips:
Add more juice for a thinner consistency, more yoghurt for thicker. Substitute half the fruit juice with a yoghurt drink. Use any combination of dried and fresh fruit and nuts, such as passionfruit, dried apricots, pears, cranberries, pepitas (pumpkin seeds).
