From light appetisers and snacks to more substantial meals, these recipes are ideal for entertaining and enjoying throughout the year.

Corn Fritters with Smoked Tasmanian Atlantic Salmonand Avocado Salsa

Ingredients:

400 grams Smoked Tasmanian Atlantic Salmon
4 medium potatoes
1 400 grams tin of corn kernels
1 egg (lightly whisked)
1 avocado
2 ripe tomatoesv1 red onion (finely diced)
1 lemonv1/2 cup chopped coriander

Method:
1. Boil the potatoes in salted water until cooked through. Strain and allow them to cool
2. Remove skin and grate the potatoes into a large bowl. Add the strained can of corn, the egg, half the red onion, salt, pepper and chopped coriander
3. Mix all the ingredients together and form into four balls. If the mixture is not holding, gradually add a little flour and water to help bind it
4. Heat a large, well-oiled saucepan and squash the balls into the pan to create patties
5. Heat these over a low flame for 5 minutes each side
6. While cooking, chop the tomato and avocados and combine in a bowl. Add the remaining red onion and a squeeze of lemon juice
7. When the patties are ready serve, top with layers of Smoked Salmon, a garnish of coriander and serve salsa on the side



Tasmanian Atlantic Salmon with Tomatoes, Capers and Olives served with Potato Gnocchi and Parmesan

Ingredients:

4 x 125 grams Tasmanian Atlantic Salmon fillets
500 grams prepared gnocchi
250 grams cherry or tear drop yellow tomatoes cut in half
2 tablespoon capers, drained
2 tablespoon roughly chopped black kalamata olives
2 tablespoon extra virgin olive oil
1 tablespoon freshly grated parmesan
Salt and ground black pepper

Instructions:

1. Pre-heat the oven to 180°C
2. Place Salmon in shallow baking dish
3. Scatter over tomatoes, capers, olives and drizzle over olive oil
4. Season with salt and pepper
5. Bake Salmon for 20 - 30 mins until cooked
6. Cook gnocchi
7. Mix the tomatoes and capers through cooked gnocchi
8. Serve Salmon and gnocchi with grated fresh parmesan cheese


Oven Baked Tasmanian Atlantic Salmon with Roast Potatoes and Steamed Broccolini

Ingredients:

4 (180-200 grams) Tasmanian Atlantic Salmon steaks
2 bunches of broccolini
800 grams small chat potatoes
1 lemon
1 tablespoon olive oil

Instructions:

1. Pre-heat your oven to 190 °C
2. Cut the potatoes in half and in a bowl, mix them together with the olive oil, salt and pepper
3. Place on a tray or dish and roast in the oven for 30 minutes
4. While these are cooking, cut and throw out the bottom thirds off the broccolini and rinse
5. If you do not have a steamer, place 2 cups of salted water in a pot with a secure lid and add the broccolini. Do not start steaming yet
6. When you have 15 minutes left of cooking the potatoes, add the Salmon steaks to the oven
7. With 5 minutes cooking time left, steam the broccolini for 3-4 minutes
8. Remove the Salmon and potatoes from oven and serve together with broccolini. Be sure to season your Salmon steak with salt and pepper. Serve with wedges of lemon.
