Roast Chicken with Lemon and Thyme

Roast Chicken with Lemon and Thyme

Under $20 to feed a family of 4

Ingredients:
1.5 kg You’ll Love Coles whole chicken
Butter
1 lemon cut in half
1 lemon thinly sliced
½ bunch Fresh and Easy thyme
Sea salt
Extra fresh thyme for garnish

Method:
1.Place two lemon halves and a half a bunch of thyme, inside a You’ll Love Coles whole chicken.

2.Bind the chicken’s legs with string. Rub the chicken with butter and season with salt.

3.Roast in a moderate oven for approximately one hour.

4.Cook chicken approximately for 40 minutes for every kilo. Check to see if chicken is cooked by inserting a skewer under the drumstick joint. Juice should run clear (not pink) when cooked.

5.Allow chicken to rest for 15 minutes before serving.
