Turkey Chops Caesar Style
Serves 4
Preparation time: 15 minutes
Cooking time: 8 minutes
Ingredients
3 slices Italian ciabatta or sourdough bread
olive oil cooking spray
6 thin slices prosciutto
8 Inghams turkey chops
2 baby cos, trimmed
3 hard boiled eggs, roughly chopped
20g parmesan cheese, shaved
Dressing
2 egg yolks
1 teaspoons Dijon mustard
1 large garlic clove, crushed
3 anchovy fillets, rinsed and dried
1 tablespoon lemon juice
2/3 cup olive oil
Method:
1.Put egg yolks, mustard, garlic, anchovy fillets and vinegar into a
food processor and process until well combined. With processor motor
running, slowly add oil through funnel, until a thick, creamy sauce forms.
If too thick, add a little warm water to dilute. Transfer to a bowl.
2.Heat a barbecue hotplate and chargrill over medium heat. Spray slices
of bread, liberally with olive oil. Cook bread for 2-3 minutes on each side
or until golden and crisp. Transfer to a large plate. Cook prosciutto on hot
plate for 1-2 minutes on each side or until crisp. Transfer to plate with
bread. Cut bread into 2cm cubes or tear into small pieces. Break prosciutto
into pieces. Combine bread pieces, prosciutto, cos lettuce and egg in a
large bowl. Spoon onto a large platter. Top with shaved parmesan.
3.Meanwhile, season turkey chops with salt and pepper. Cook on barbecue
hot plate or chargrill for 3-4 minutes on each side or until cooked to your
liking. Serve turkey chops on Caesar salad. Drizzle with dressing and
serve.
