Frozen Mango Margarita

National Margarita Day: Thursday 22nd of February, 2018

It's National Margarita Day on Thursday 22nd February so here's a frozen mango margarita recipe to celebrate thanks to Aussie Mangoes!

Serves 8

 

Ingredients

3 Aussie mangoes

250ml tequila

160ml fresh lime juice

160ml Cointreau liqueur

100g caster sugar

Salt

2 Lime cut into 8 wedges

 

Method

 

Frozen mango cheeks:

Slice the cheeks off the mango and peel the skin

Wrap the cheeks in plastic wrap and place it on a baking tray or shallow dish in the freezer

Freeze for 3-5 hours or until firm

 

Margarita:
Rub the rim of each serving glass with a lime wedge
Spread salt over a plate and dip the glass into the salt to coat
Place the glasses in the fridge for 5 minutes or until chilled
Blend the frozen mango, tequila, lime juice, Cointreau and sugar in a blender until smooth
Divide the mixture between the serving glasses. Decorate with lime wedge and serve immediately
