Salmon Poached in Champagne with Salsa (Serves 2)

Ingredients
2 salmon fillets (skin off)
1 cup champagne (drained)
1 cup water
1 tablespoon Gourmet Garden Lemongrass

Salsa
1 can diced tomatoes (drained)
1 can sweet corn kernels
1 medium onion (diced)
1 red capsicum (diced)
Juice of 1 lime
2 tablespoons Gourmet Garden Coriander
1 tablespoon Gourmet Garden Hot or Mild Chilli

Method
Step 1 Heat together in a sauté pan the champagne, water and lemon grass
Step 2 Reduce to a slow simmer and add the salmon
Step 3 Cover and poach until done
Step 4 For the Salsa: Mix all of the ingredients together and stand in the refrigerator for 1 hour
Step 5 Serve together with rice or chat potatoes.
